========================== Etsuji Oishi, Chef ========================== Mr. Oishi's career began at the age of ten, when he started helping out in his mother's restaurant. He was accepted at Abe-Tsuji, Japan's foremost cooking school, at the age of 16. After graduating, he worked at a number of leading hotels and restaurants in Japan before relocating in 1978 to Hawaii and, shortly thereafter, to New York City. In addition to working as a chef at Hatsuhana, he also attracted a following (whose number included Mr. Sone) as the principle chef at Kikkyo, a private dining club that catered to corporations and individual members. Although Mr. Osihi is an expert on all types of Japanese cuisine, he is most appreciated for his unique version of kaiseki.
========================== Kaiseki ========================== A uniquely Japanese tasting menu, kaiseki cuisine has its origins in the esoteric rituals of the tea ceremony. As envisioned by Chef Oishi, kaiseki is a multi-faceted, multi-course feast of original creations centered around the freshest, most delicious sushi available. At Sushi Rose, kaiseki is also a chance to relax and enjoy the company of one's fellow diners while savoring as many as nine courses of exquisite delicacies.
Reservations are required for a kaiseki dinner.
